Every Sunday we make dessert. My kids take turns each week picking out a recipe, figuring out what ingredients we will need and then we make it all together after dinner. Thus Sunday Sweets. We've made this carmel corn recipe two weeks in a row now. Yes. It's that good.
Caramel Corn
1/2 cup popcorn kernels - popped
1/2 cup butter
1 cup brown sugar
1/4 cup light corn syrup
1/2 tsp salt
1/4 tsp baking soda
1/2 tsp vanilla
Melt butter in saucepan over medium heat. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. When mixture begins to boil, stop stirring and let boil for 5 minutes. Remove from heat. Stir in baking soda and vanilla. Pour over popcorn and mix well. Spread in jelly roll pan. Place in 250 degree oven for one hour, stirring every 15 minutes. Cool.
